Easy Pumpkin Spice Oatmeal

Happy Fall, my friends!  Let’s just pretend it hasn’t been years and years since I’ve actually written a blog post and just jump right into the recipe.  I found this gem on Pinterest and decided to give it a try since I’m obsessed with all things pumpkin.  I made a few changes and adaptations, but you can view the original recipe here.

Easy Pumpkin Spice Oatmeal

Ingredients:
1 can pumpkin
2 C milk
1 tsp vanilla extract
1 C steel cut oats
1 tbsp chia seeds
2 tsp pumpkin pie spice
1/2 C light brown sugar
4 tbsp butter

Optional Garnish:
dark chocolate chips
sprinkle of pumpkin pie spice

Directions:
– Combine all ingredients in a crock pot.
– If your crock pot is large like mine, cook on low for 3-4 hours.  Stir occasionally to prevent edges from sticking and burning.
– (For smaller crockpots, extend cooking time on low up to 8 hours.)

This recipe makes for the perfect, healthy breakfast, but I’ve been enjoying a bowl for dessert at night before bed.  Between my hypoglycemia and pregnancy, it’s super important to keep my blood sugar in check.  This has been allowing me to sleep through the night, and since Baby Grace will be here before we know it, I need to take advantage of that as long as possible.
